Officially registered in 1999 yet brewing (and selling) beers since 1993, the former Brasserie Artisanale de Fribourg founded by Alain Morand and Miklos Dornacher is one of the very first pioneer of craft beers in the country. It took them almost 20 years to find a ""real"" name (Fri-Mousse) for their brewery. If I had to choose one word to define this brewery, it would be ""constancy"". Constancy in quality but also - unfortunately - constancy in their offering.
They are producing nowadays about 1000 hl yearly and their first plant in the old city of Fribourg is too small for that since many years. If this site still remains ""officially"" their production facility, it is in fact only used for small- or test-batches and for visits as well. The exact location of their plant in Düdingen (15 hl installation) is a well-kept secret. Don't ask me why..."

"Founded in 1788 by François Piller this brewery changed its name many times in its first 100 years. It chose its last name after the pope made the bishop of Fribourg a ... Cardinal in 1890.
In 1970 5 breweries joined forces to form the Sibra Holding (Cardinal, Beauregard, Comète, Salmenbräu and Wädenswil). It was 1996 when the Feldschloesschen-Huerlimann-Holding Group - which in the meantime purchased the majority of the capital from the Sibra Holding - announced the the closure of Cardinal. But Feldschloesschen had to face with serious resistance from the beer-lovers of the french-speaking part of the country. The sales dropped down and they had to come back on their decision.
Finally, the decision fell on August 2010: the plant will be closed on June 2011. The reason is the outsourcing by Carlsberg (owner of Feldschlösschen since 2000) of 20% of the production from the Feldschlösschen Group. The plant in Fribourg being used at 40%, it seems logical that Feldschlösschen chose to regroup the production in Rheinfelden.
The brand Cardinal is still brewed nowadays (in Rheinfelden or in Sion, no idea): the Blonde, Spéciale, Blanche, Draft and Lime Cut."
